Winemaker, William Allen from Two Shepherds in Northern California shares his experiences in the winemaking industry. Journalist, Phoebe Chongchua, talks with him about his old-world style wine, Rhone Valley in France, and why he uses the stems in his winemaking.

There are lots of decisions that winemakers must make during the process which makes this a challenging and very personal experience. Allen doesn’t use commercial yeast in his winemaking. He prefers to use a style of winemaking that is more “hands-off”. He uses an approach called native yeast fermentation; gathering yeast from the skin of the grapes to produce his wine.
